Penne with Radicchio, Pancetta, and Balsamic Vinegar


salt
1 pound penne
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1⁄4 yellow onion, chopped
4 ounces pancetta, diced
2 heads radicchio, chopped
1⁄4 cup balsamic vinegar


Bring a large pot of water to a boil. Add salt and the pasta and cook until the pasta is almost al dente, then drain. Meanwhile, in a large saucepan, warm the olive oil. Add the garlic, onions and pancetta and cook for 5 minutes until the pancetta is golden. Transfer the penne to the saucepan and cook for 1 minute. Fold in the radicchio and cook for 3 minutes until the radicchio has wilted. Add the balsamic vinegar and saute' for 1 minute to allow the flavors to combine and the penne to absorb some of the sauce. Serve immediately.
