Oil-Marinated Mushrooms


2 pounds cremini mushrooms, cleaned
4 cups white wine vinegar
2 bay leaves
1 tablespoon black peppercorns
1 tablespoon coarse sea salt
3 cloves garlic, thinly sliced
3 cups extra-virgin olive oil, plus extra if necessary



Bring a large pot of water to a boil. Cut any large mushrooms in 1⁄2.. Add the vinegar, bay leaves, peppercorns, mushrooms and salt. Boil for 10 minutes, drain and spread the mushrooms out on a clean dish towel to dry. Transfer to a large, clean jar and add the garlic and olive oil, adding more oil if necessary to cover. Cover and refrigerate overnight. Serve as part of an antipasto, or slice and use on sandwiches.
Makes 21⁄2 cups
