Peppers with Balsamic Vinegar


2 yellow bell peppers, seeds and inner white ribbing removed
2 red bell peppers, seeds and inner white ribbing removed
1 medium onion
1 bay leaf
3 tablespoons balsamic vinegar
salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
3 sprigs parsley, chopped
3 sprigs thyme, chopped

Cut the bell peppers into wedges. Thinly slice the onion and arrange it on a microwave safe plate. Top with the bell peppers and the bay leaf. Drizzle with vinegar and season with salt and pepper. Cover with plastic wrap and microwave on high for 5 minutes. Remove from the microwave, drizzle with olive oil and sprinkle with the herbs. Serve as an accompaniment to grilled chicken or steak.
