Yellow Bell Pepper Sauce


3 yellow bell peppers, seeds and inner white ribbing removed, chopped
1 small onion, chopped
2 tablespoons butter
salt
3 tablespoons heavy cream

Combine the peppers and onions in a microwave-safe dish. Top with the butter and season with salt. Cover and microwave on high for 5 minutes. Remove and set aside to rest for 2 minutes. Transfer the mixture to a food processor and purée, adding the heavy cream in a slow, steady stream, until a smooth sauce forms. Serve tossed with pasta or gnocchi.
