Radicchio and Arugula Salad
4 heads radicchio rosso di Treviso
4 tablespoons red wine vinegar
1 clove garlic, minced
5 tablespoons extra-virgin olive oil
salt
1 Granny Smith apple, cut into small cubes
1 bunch arugula, roughly chopped
3 ounces Grana Padano, sliced
Wash and dry the radicchio. Slice lengthwise, stems included. In a large bowl,
combine the vinegar, garlic and olive oil, season with salt and whisk well to
combine. Add the radicchio, apples, arugula and Grana. Toss well to combine and
serve.
