Radicchio and Arugula Salad


4 heads radicchio rosso di Treviso
4 tablespoons red wine vinegar
1 clove garlic, minced
5 tablespoons extra-virgin olive oil
salt
1 Granny Smith apple, cut into small cubes
1 bunch arugula, roughly chopped
3 ounces Grana Padano, sliced

Wash and dry the radicchio. Slice lengthwise, stems included. In a large bowl, combine the vinegar, garlic and olive oil, season with salt and whisk well to combine. Add the radicchio, apples, arugula and Grana. Toss well to combine and serve.
Serves 6
