Smoked Salmon Crostini
Crostini di Salmone Affumicato

1 celery root, peeled and julienned
2 tablespoons Dijon mustard
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper
12 thin slices smoked salmon, halved
24 thin slices Italian bread
1/2 bunch chives, snipped



Mix the celery root, mustard, olive oil, salt and pepper. Drape the salmon on the bread and top with the celery root mixture. Sprinkle with the chives. Serve within 30 minutes.
Serves 12
