Apple and Stracchino Omelet
Tortino di Stracchino e Mele

2 tablespoons butter, divided
1⁄2 Golden Delicious apple, peeled, cored and thinly sliced
1⁄2 teaspoon cinnamon
2 large eggs, beaten
salt
2 ounces stracchino



In a skillet over medium heat, melt 1 teaspoon of butter. Add the apples, sprinkle with the cinnamon and cook until tender, then set aside. In another skillet over medium heat, warm the remaining butter. Add the eggs and season them with salt. Once they begin to set, arrange 2⁄3 of the apples in an even layer over the eggs. Using a pastry bag, if desired, top with the stracchino, leaving a 1-inch border. Cover the eggs and cook until they are set and the cheese has melted.
