Vegetarian Tartine
Tartine Vegetariane

1 carrot, grated
2 tablespoons extra-virgin olive oil, plus extra
1 lemon, very thinly sliced, plus the juice of 1 lemon
1/2 pound caprino, or substitute goat cheese
2 tablespoons capers, drained and chopped, plus extra
salt and freshly ground pepper
1 loaf sandwich bread, sliced, crusts removed, and cut into rounds,
1 cucumber, sliced



Place the carrots in a bowl with the olive oil and lemon juice, stir well and set aside to marinate. In another bowl combine the caprino with the capers. Slowly drizzle in olive oil while stirring until it reaches a smooth consistency, then season with salt and pepper. Spread each slice of bread with the cheese mixture, lay the cucumbers on one side and the other with the lemon slices. Top the center with a bit of the carrot mixture, and garnish with a caper.
Serves 4

Wine Suggestion, dry aromatic white or juicy mediumbodied red
