Fig and Caprino Crostata


1 recipe basic pasta frolla
2 tablespoons unsalted butter
7 figs, halved
1⁄2 teaspoon cinnamon
freshly ground pepper
14 ounces caprino, or substitute goat cheese, sliced
1 tablespoon flour
7 tablespoons heavy cream
2 chives, chopped
1⁄4 cup walnuts
salt

Prepare the crust according to the basic pasta frolla recipe. Preheat the oven to 375º. In a small skillet over medium heat, melt the butter. Add the figs and cook for 5 minutes. Remove the figs from the heat and season with the cinnamon and pepper. Arrange the caprino in a pasta frolla lined tart pan, or free-form crust. In a bowl, combine the flour, figs, cream, chives and walnuts. Season with salt and pepper, then pour the mixture over the cheese. Transfer to the oven to bake for 35 to 45 minutes.
Serves 6 to 8
