Cranberry Apples

4 Renette apples
4 tablespoons honey
1 cup dry white wine
3⁄4 tablespoon butter
1 tablespoon sugar
7 ounces fresh cranberries
whipped cream (optional)

Preheat the oven to 350°. Core the apples, leaving the rest of the fruit intact, including the entire bottom. Arrange the apples in a baking dish. Fill the center hole of each apple with 1 tablespoon of honey. Add the white wine to the baking dish and transfer to the oven to bake for 10 to 15 minutes, until the apples are just soft but still hold their shape. Meanwhile, in a skillet combine 2 tablespoons of water with the butter and sugar. Warm over medium heat, stirring constantly, until the butter has melted and the mixture is well combined. Remove the apples from the oven and pour the butter-sugar mixture over them. Transfer back to the oven to bake for 2 more minutes. Remove the apples from the oven and fill their centers with the cranberries. Serve immediately accompanied by whipped cream if desired.
