Pandoro Pudding
Budino di Pandoro

4 eggs
1 1⁄2 cups milk
5 tablespoons sugar
3 ounces pandoro, cut into 1⁄2-inch pieces
1⁄2 tablespoon butter
confectioners’ sugar for dusting

In a bowl, combine the eggs, milk and sugar. Mix until well combined. Add the pandoro, stir well and set aside to soak for 15 minutes. Meanwhile, preheat the oven to 320°. Lightly brush a bundt pan with butter. Add the pandoro mixture to the pan and transfer to the oven to bake for 45 minutes, or until the pudding is set. Remove from the oven and set aside to cool. To serve, unmold the pudding onto a platter and dust with confectioners' sugar.
