Calamari with Swiss Chard and White Wine
Calamari Inzimino



1⁄3 cup extra-virgin olive oil
2 cloves garlic, crushed
hot red pepper flakes to taste
1 pound calamari, cleaned and cut into 1⁄2-inch rings
2 tomatoes, peeled, seeded and chopped
2 cups dry white wine
10 ounces Swiss chard, washed and finely chopped

Warm the olive oil in a skillet over medium heat. Add the garlic and hot red pepper flakes and cook until the garlic is slightly golden. Add the calamari. When it has cooked through, about 2 minutes, add the tomatoes and the wine and let it reduce. When the calamari becomes tender, about 5 to 8 minutes, add the Swiss chard and cook until tender, about 10 minutes. Serves 4

Wine Suggestion: Juicy medium-bodied red
