Beet Pasta with Goat Cheese Sauce
Pasta in Salsa di Caprino

1⁄2 cup extra-virgin olive oil
8 ounces goat cheese
1 bunch chives, chopped
1⁄2 cup chopped walnuts
salt and freshly ground pepper
1 pound beet-flavored pasta

In a bowl or in a food processor, combine the goat cheese and olive oil and mix until it makes a smooth paste. Stir half the chives into the mixture. Bring a large pot of water to a boil. Add the pasta and salt and cook until al dente. Once the pasta is cooked, drain, and toss with the goat cheese mixture. Top with remaining chives and walnuts. Serve immediately. Serves 4
