Gnocchi with Zucchine

2 pound gnocchi
3 medium zucchini
3 tablespoon butter
1 cloves garlic chopped
1 pinch saffron
1 tablespoon fresh or chopped parsley
3 tablespoon of grated grana padano or parmigiano reggiano
salt and pepper

Cut the zucchini into julienne about 1/5 inch. Preheat the oven to 450 degrees.
Bring in a pot 2 inch of water to a boil and steam the zucchini for 3 minute.
Meld the saffron with 4 tablespoon of cold water.
Put 2 tablespoon of butter in a large pan and place in the oven for 1 minute, add the garlic and cook for another minute, add the zucchini, parsley, salt, pepper and the saffron and cook for another 2 minute.
Cook the gnocchi in boiling water with salt, strained and mix with the zucchini mixture and with the rest of the butter. Sprinkle with cheese and serve.
Serves 6
