Birds Blown Away

The name of this recipe was created in Veneto to joke about the mutilation of one of its most popular recipes: polenta e osei. In this recipe the “osei” (birds) are no longer there, they have blown away! The original dish was a skewer of tiny little birds and small pieces of pork or sausage together with a special kind of polenta.



2 pounds pork loin, cut into 1-inch cubes
8 oz. pancetta, thinly sliced and halved
36 sage leaves
1 pound luganiga di Monza or Italian sausage, cut into 1- inch pieces
1 tablespoon butter, plus extra
1 tablespoon extra-virgin olive oil, plus extra
1 cup white wine
1 28-ounce can puréed tomatoes
salt and freshly ground pepper

Thread 1 skewer, starting with 1 piece of pork, 1⁄2 slice of pancetta folded in 1⁄2 twice, 1 sage leaf, 1 piece of sausage, another sage leaf, and another piece of pork. Repeat with the remaining skewers. In a large skillet over medium-high heat, melt the butter with the olive oil. Add the skewers (you will need to do this in batches) and drizzle with some of the wine. Add the tomatoes, season with salt and freshly ground pepper and cook until the meat is cooked through.
