Cranberry Salad



2 packages mixed baby greens
1⁄8 cup crumbled goat cheese
1⁄4 cup dried cranberries
1⁄4 cup green grapes, cut in 1⁄2
1⁄4 cup pine nuts, toasted
1⁄4 cup extra-virgin olive oil
juice of 1 lemon
salt and freshly ground pepper

In a large bowl, combine the mixed baby greens, goat cheese, cranberries, grapes and pine nuts. Drizzle with the olive oil and lemon juice and season with salt and pepper. Toss well to coat and serve immediately.
Serves 4 to 6
