Tocai-Flavored Chicken Legs
8 chicken drumsticks
1 cup wine vinegar
2 tablespoons fresh ginger, minced
4 cloves garlic, minced
salt
5 tablespoons unsalted butter
1 onion, minced
1 cup Tocai Friulano
1 tsp hot pepper flakes
In a bowl, combine the chicken with the vinegar, 1 cup of water, garlic and
ginger and season with salt. Marinate for 30 minutes. Remove and pat dry. In
a skillet over medium-high heat, warm the butter and add the chicken legs.
Brown on one side. Turn the chicken, add the onion, reduce heat and continue
cooking. As the chicken starts browning, add the wine. Cover the chicken and
simmer for 30 minutes. Season with the crushed pepper. Remove from heat.
Place on a serving platter, pour the sauce over the chicken and serve.
